海绵蛋糕:蛋黄95g细砂糖(用于蛋黄)25g蛋白115g细砂糖(用于蛋白)50g低筋面粉55g黄油12g牛奶28g奶油夹馅:草莓15颗左右淡奶油200g糖粉(或细砂糖)15g装饰:草莓味百奇2.5盒

制作海绵蛋糕:①预热烤箱至180度②蛋黄加细砂糖25g用电动打蛋器搅打至颜色发白、体积微微膨胀

③蛋白分2-3次加入细砂糖,用电动打蛋器搅打至提起打蛋头有大弯钩,蛋白细腻有光泽

④取1/3的蛋白混合进蛋黄糊,用蛋抽搅匀

⑤筛入低筋面粉,用刮刀翻拌均匀至完全没有干粉的状态

⑥黄油和牛奶微波炉高火加热15秒,然后搅一搅使黄油完全融化,和牛奶充分融合,晾在一边备用

⑨将面糊倒入铺了烤纸的28*28cm方形烤盘,轻轻震一下模具排出其中的气泡。放入预热到180度的烤箱,180度烤13分钟左右,取出倒扣在晾网上,撕掉烤纸,晾凉备用

组装&装饰:①用四寸慕斯圈在蛋糕体上刻出4片蛋糕

②取一片蛋糕,表面抹一层奶油,放上草莓块,再抹一层奶油;再放上第二片蛋糕,重复操作两次
