看完这些我可能已经想到大家会怎样的方式来跟小伊“唠嗑”了“小伊,你有这位大师的开酥技巧吗?”“这样的面包怎么开酥啊?”……我要真的知道还不开班授课?不过我曾分享过的这些开酥技巧我倒希望能够给大家一个不错的参考!开酥技巧→1、面团的温度要和黄油的温度相符,否则面团或油脂会断裂。2、每次在擀制面团折叠的过程中,一定要旋转面团,这样可以保证内部黄油分散均匀。3、反折叠面团的特点就是,黄油包裹在外面,这样就会导致非常容易失败,所以在制作的过程中一定要快。4、在面团中添加白醋可以有助于面团的存储,及防止面团表面出现“黑点”。5、松弛要放入冷藏室,防止因为温度偏高导致黄油变软融化。6、牛角面包的面团不用揉至太高的筋度,一般情况下五成筋度或者面筋刚开始产生就行,如果太高的筋度反而会影响最终产品的品质。7、为了防止面皮与油脂不混淆以及酥皮黏在一起,在分割整形时,要使用锋利的工具来分割;刷蛋液时尤其注意不要让蛋液涂到切面上。干货直达→1个视频11分钟,马丁大神的双色可颂连小白都能做!
